Oftentimes Cameron and I have places we need to be shortly after work, but I never want to sacrifice flavor and nutrition when it comes to dinner time. In enters Everyday Food, a small hand held mini cookbook (available at the check out stand) chocked full of delicious easy to make food. The other evening I was able to make both of these and we were able to eat in approximately an hour. I look this cookbook and Mom I am a convert!
Arugula Salad with Grilled Chicken, Corn, Tomatoes and Blue Cheese2 tbsp. olive oil
1 lb. chicken breasts
coarse salt and ground pepper
4 ears corn
2 tbsp. fresh lemon juice
1 pound arugula (or use whatever lettuce you have)
2 large tomatoes
1/2 cup crumbled blue cheese
1. Heat grill to high, lightly oil hot grates. Season chicken with salt and pepper. Grill 2-4 min. each side. Let rest 5 minutes, cut into strips.
2. Cut corn off cobs
3. In large bowl, whisk together lemon juice and oil; season with salt and pepper. Add arugula, tomatoes, cheese, chicken and corn, toss to combine. Serve immediately.
French Potato Salad
2 1/2 pounds fingerling or small new potatoes
coarse salt and ground pepper
1/4 cup olive oil
3 tbsp. Dijon mustard
2 tbsp. sherry vinegar
1 small shallot
3 tbsp. chopped parsley
1 tsp. chopped thyme
1/4 small red onion
1. Place potatos in large pot, cover with cold water and season with salt. Bring to boil; reduce to a simmer and cook until tender, about 15 minutes. Run under cold water to cool slightly, then drain.
2. Whisk oil, mustard, vinegar, shallot, parsley and thyme. Season with salt and pepper. Add potatoes and onion, toss to combine. Serve at room temperature.
