When I first saw the name of these cupcakes they sounded a but disgusting, but the combination of ginger and carrot together is dynamite. The marzipan carrots (last year I used fondant, which provided for a more rigid carrot) with dill ends really make them extra special in my book. I have been dealing with contractors all week, so I have needed to find fun things to keep me busy at home. I decided to make these cupcakes and then play Easter Bunny last night making deliveries throughout the neighborhood.
